Current Research

Sierra is developing meal kit recipes that feature commonly underused food items by the clientele of charitable food organizations across Georgia. This project follows Dr. Jung Sun Lee's Georgia Hunger Study, and hones in on several identified issues affecting food pantry clientele; most notably, certain food items are being underused/wasted at the pantry level due to client taste aversions and lack of preparation self-efficacy. She led the content development for the 2025 UGA SNAP-Ed Calendar which features these recipes, related recipe cards, and demonstration videos. 

Sierra is developing a sensory evaluation protocol to evaluate these meal kit recipes within select food pantries in the Northeast Georgia region.
